Around
the Family Table
Everybody
reaches for the bread. Thick, chewy slices... Crispy thin breadsticks.
It's the traditional common bond while you contemplate what comes
next. The meal begins.
At any restaurant
in Italy, long before the menus are handed over or talk of food
has begun, bread is placed on the table. It's as if without the
basket of several thick slices of chewy bread and crisp thin breadsticks
peeking out from their neat envelopes, a person cannot even begin
to assess their appetite or decide what to order. An Italian meal
is defined by many components, but if bread were omitted, the diners
gathered at the table would feel lost. In no home or restaurant
in Italy is the breadbasket ever empty. Bread is simply part of
the culinary scenery -- something one reaches for automatically.
Americans may
like their sandwich loaves and hamburger buns, but in Italy it has
been estimated that the average Italian consumes a half pound of
bread daily.

There
is always room - and time - for dessert. But it's a matter of
pacing, not just appetite. In Italy, the waiter seldom mentions
dessert as he clears the table of dishes or tops off glasses with
the last of the wine. In many restaurants a new menu, listing
only desserts, will be presented - whether asked for or not. The
several minute's lag between the actual meal and the ordering
of dessert is all that is often needed to be whetted for something
sweet, followed by a strong cup of espresso or frothy cappuccino.
